Caffeine hits now guilt-free

There’s no need to feel guilty about that double espresso—scientific research suggests coffee has some surprising health benefits.
Drinking large amounts of coffee may help to ward off high blood pressure, age-related memory decline, skin cancer and type 2 diabetes. Plus, Spanish research published in the Journal Of Nutrition Review found coffee has as many cancer-fighting antioxidants as tea and red wine.
The benefits of caffeine are more apparent in women than men but scientists are unsure why. French researchers say drinking more than three cups of coffee a day helps protect older women against some age-related memory decline. The French National Institute of Medical Research followed 7000 men and women and found women who drank more than three cups a day had a 30 per cent less chance of having a decline in verbal memory and 18 per cent less chance of visual and spatial declines, compared with women who drank one cup a day.
The study's lead author Dr Karen Ritchie says she is not sure why only women benefited. "Our best guess is that women don't metabolise coffee in the same way as men," she says. The Sun Herald (Sydney).

A daily dose of coffee with your doughnut could help prevent Alzheimer's disease, a new study shows.
Caffeine blocks the disruptive effects of high cholesterol that can trigger Alzheimer's, researchers from the University of North Dakota have found.
The caffeine equivalent of one cup of coffee is enough to protect the blood-brain barrier from the damage caused by a high-fat diet. Cholesterol breaks down the barrier which protects the nervous system from contamination. The Advertiser.
Coffee can prevent Liver Cancer

Areport published in the latest issue of Hepatology journal, indicates that drinking a cup of coffee or more every day can protect people from liver cancer. Liver cancer is a disease in which malignant cells are found in the tissues of the liver.
Researchers in Milan, Italy, looked at 10 studies on coffee and liver cancer. The studies covered 2,260 people with liver cancer and nearly 240,000 without.
Participants from Greece, Italy and Japan reported their coffeedrinking habits. Some of the studies defined high coffee consumption as three or more daily cups. Others set the bar lower, at just a little more than one cup.
The data showed that coffee drinkers were 41 per cent less likely to have been diagnosed with liver cancer than people who don't drink coffee.
For every daily cup of coffee people drank, their odds of having been diagnosed with liver cancer dropped by 23 per cent compared with people who never drink coffee, the report said. People who drank a lot of coffee were 55 per cent less likely to have been diagnosed with liver cancer than those who didn't drink any coffee. The Times of India

Topic: Cleaning Methods!
Your espresso machine can never be too clean. It is absolutely essential that your machine is backflushed twice a day with water and twice a week with detergent (minimum).
If you are using more than 20kg of coffee per week you should backflush three times a week,
30kg = four times per week, etc.
Steam arms should never be allowed to accumulate milk residue, they should be wiped with
every use. It is essential that you have the right equipment to clean your machine, you need:
• A group head brush
• A blind filter
• Espresso machine detergent.
Step 1: Rinsing
Brush the interior of the group head.
Remove any coffee residue in filter handle and place blind filter inside so the tip is facing
upwards.
Lock handle into group and run water, loosening and tightening the handle until the water that
is running out of the group becomes clear. If the handle becomes difficult to move, do not
force it, turn the water off then loosen the handle.
Step 2: Backflushing
With the blind filter inserted, lock handle into group and run water for ten seconds (there
should be no water running out of the handle) then turn water off for ten seconds. Ten
seconds on and ten seconds off is one cycle, you need to do four cycles to every group every
night. Do not remove handle until cycles are completed.
Step 3:
Detergent
Place a teaspoon of detergent into filter handle with a blind filter inserted and backflush (refer to step 2).
If you want to clean your machine more thoroughly, increase the water time to 20 seconds.
Rinse the group head making sure there is no detergent left in the handle (refer to step 1).Ensure finally that you backflush with just water to rinse the interior of the machine.
Step 4:
The next day
The first 2 coffees you make in each group head must be thrown away to replace the coffee
oil on the inside of your machine. This is called priming.
Cafes and restaurants that serve truly excellent coffee clean their machines every night.
Your handles need to be wiped out every night, and soaked in hot water and coffee detergent
once a week. Immerse only the metallic part of the handle in liquid as soaking the plastic part
will cause it to corrode and come loose.
During cleaning is the only time handles should be out
of the group, always keep handles locked in place.
When turning the machine off, first turn the switch to zero and make sure handles are not too tightly locked in the group. It is important that you release the pressure by opening up your steam knobs. After a minute, your machine should have no more steam coming out.
When you turn your machine on, wait for your steam arms to start hissing, this is the right time
to close them and it tells you your machine will be hot in around five minutes.
